The Erzincan Tulum cheese is a traditional specialty from the Eastern Anatolian region of Erzincan. It is made exclusively from sheep’s and goat’s milk and aged over a long period of time. Through this maturation process, it develops a firm, crumbly texture and its characteristically intense and salty aroma, which clearly distinguishes it from other types of cheese. In regional cuisine, it plays an important role and is enjoyed both at breakfast and in hot dishes.
The production follows old, traditional methods: fresh sheep’s and goat’s milk is collected, heated, and processed into a basic curd mass. It is then mixed with special cultures, salted, shaped, and aged for several months. During this time, the cheese develops its unique flavor and distinctive texture.
